Easy Dinner Recipe - Crock Pot Roast Chicken

Looking for an easy recipe for these cold, rainy days? This roast chicken in a crock pot could not be easier to prepare and the results are delicious! Put this in the crock pot in the morning for a wonderful family meal in the evening!

1 (4lb) whole chicken, insides removed and washed/patted dry (I buy the brined whole organic chicken from Trader Joe's)

1/2  TB of paprika or Chipotle chile

2 TB all purpose seasoning ( such as Mrs. Dash , Archer Farms House Blend, or Trader Joe's 21 Season Salute)

1/2 TB garlic powder

1 tsp salt

1. Start by mixing together paprika, all purpose seasoning, garlic powder and salt.

2.  Place 4 medium sized  foil balls in bottom of crockpot. This will act as a stand to prevent the chicken from drying out.

NOTE: You can also use large 2 inch chunks of root vegetables ( potatoes, carrots, onions, turnips) instead of foil for your chicken stand. The when chicken is done, you ALSO have flavorful veggies too!

3. Rub seasoning over your entire chicken (including the inside of the bird).  Place on top of foil balls or root veggies. Cover and cook  on HIGH for 4 – 4 1/2  hours, or LOW  for 6 1/2 – 8  hours
